An easy and quick last minute party idea just in time for Cinco de Mayo!
You all know that I LOVE Cinco de Mayo. It’s one of my favourite food holidays mainly because of well, two little things called tacos and margaritas. This year things are taking a slightly different route for obvious reason- but luckily tacos are still front and center!
Not wanting to miss out on the fun, I thought a little Cinco de Mayo Bar cart would be an easy idea that even this pregnant gal could put together.
I stuck with tacos for this because it was just easier- plus Ara and I usually do taco bowls at least once a week. But the options are endless! A build your own Quesadilla Bar would be a really cute idea as well, or dare I say it, a build your own Margarita Bar!
Regardless of which you choose, it’s a fun idea that lets your guests/family customize their own meal and have a little fun doing it too!
It’s best to set it up the way people would take the food. Starting with the shell and ending with the fun toppings! I also like to have some salsa and chips nearby because is there really a party without those two? I think not 😉

Think soft shells, hard shells etc. Have a diet conscious crowd? Have some bowls nearby for taco bowls!
The meat
Once again you can customize as you wish. We went with a classic beef taco filling but ground turkey, grilled chicken or even fish work! Vegetarian? Try a delicious black bean filling like this one. Anything works, just make sure to have it right up and centre next to the shells!

Looking for healthier options? I like to sometimes switch up the sour cream with greek yogurt, use skim shredded cheese and make my own homemade salsas and guacamoles.
I like to keep them all in similar size bowls and dishes so it doesn’t look to crazy and chaotic! Small wooden spoons are set to the side for people to help themselves with and there’s an endless amount of chips on hand too!
