To be honest I was always a little intimated in making cheese straws myself. They always look so fancy when you buy the store bought versions and I wasn’t sure if I could get mine to look just as nice. Turns out I was wrong. They are quite simple and I am kicking myself that I didn’t try to make them sooner. I did make a few batches of these before settling on the final one. My tips? Prep everything before you take the pastry out of the fridge. Because you’re rolling it down more, it gets hard to handle. Also making smaller straws allows for easier handling- but they look just as yummy!

Puff Pastry Cheese Straws
One sheet of pastry yields 12-16 straws
You’ll need:
- 1 sheet rolled puff pastry
- 1/4 tsp dried herb I used basil
- 1 egg + 1 tbsp water
- 1/4 cup grated parmesan cheese
- salt and pepper to taste
Preheat oven to 375 degrees farenheit
Make egg wash: whisk together egg and water and set aside.
Roll out puff pastry into a 10 inch by 10 inch square.
Brush egg wash all over puff pastry. Using a fork make small indentations all over large square. This prevents the pastry from rising too much
Sprinkle dried herb all over. Top with parmesan cheese. Season with salt and pepper to your taste. Press herbs and cheese onto pastry with a rolling pin. You want to get everything nice and flat, however keep in mind that if the pastry gets too thin it will be hard to handle! Just 2-3 rolls are fine!
Using a very sharp knife, cut pastry in thin vertical strips, and then cut in half horizontally. Repeat until you have 12-16 straws.
Very carefully remove each strip and with your hands, twist puff pastry. Place on a baking sheet that is lined with parchment paper. Repeat with remaining strips. Place in oven and bake for 15- 20 minutes until golden, rotating tray halfway through.
Serve right away or store in an airtight container.
