Preheat oven to 400 degrees Fahrenheit. Cut pitas into wedges. Rub with olive oil, salt and pepper. Lay on a rimmed baking sheet and bake for 15-20 minutes or until golden, flipping once.
Remove from oven and let cool. In the meantime, chop up roasted peppers and crumble feta cheese.
Place tzatziki in a small bowl in center of your dish. Place cooked pita chips all around. Toss red peppers, olives and crumbled feta all over. Garnish with mint and serve.
Notes
I prefer to use thicker gyros pitas for a more filling bite however thin ones work too! Just adjust the bake time as they will cook much quicker!
