One of favourites for the summer, this easy chickpea salad is the perfect side dish for your upcoming bbqs!
Finally feels like summer around here in Montreal and that just means one thing- summer eating is on my mind!
There’s nothing better than grilling and eating yummy salads al fresco with a glass of wine- literally my favourite type of meal! We finished setting up our backyard and it’s all about the outdoor meal for us. Luckily the kids love it too!
One of the salads we eat quite often in the summer has got to be this easy Chickpea Salad. It’s so filling (hello, chickpeas are an amazing source of protein!) and so incredibly easy to make. Like beyond easy!
Just combine a bunch of fresh ingredients, add a little vinaigrette and you are all set.
I use the following ingredients for the base of my easy chickpea salad:
- chickpeas
- red peppers
- red onion
- cherry tomatoes
- parsley
But you could easily change it up with something like grilled zucchini, diced cucumbers or even fresh corn.
And if you’re looking to make it more satiating, I would definitely add a more calorie dense topping like the below.
Try adding one of these additions:
- diced salami
- feta cheese
- tuna flakes
- homemade croutons
But to keep it simple, we’re just sticking with my original today! The special ingredient has got to be the red peppers because I don’t use raw ones- I like to grill or roast them with a touch of oil and Italian seasoning. I feel like this is what brings the salad to a whole other level!

Easy Chickpea Salad with Roasted Peppers
Ingredients
- 4 cups chickpeas rinsed
- 2 red peppers *roasted or grilled
- 1/2 red onion diced
- 1-2 cups cherry tomatoes quartered
- 1/4 cup finely chopped parsley
easy dressing:
- 1/4 cup olive oil
- 2 tbsp white balsamic vinegar
- 1 clove garlic minced
- 1 tbsp lemon juice
- dash of salt
Instructions
Easy Dressing:
- whisk together dressing ingredients, seasoning with salt as needed. Set aside
To assemble salad:
- Roughly chop up red peppers and set aside
- In a large bowl add in your chickpeas, red peppers, red onion, cherry tomatoes and parsley.
- Pour in the dressing and mix to combineServe immediately.
