One of our favourite cocktails has got to be an Aperol Spritz.
It’s perfect for an evening cocktail, or just on a hot summer day!
But we love to drink it all year long, so sometimes our Aperol Spritz gets dressed up a bit! A little thyme simple syrup goes a long way in making it so perfect for those colder months.
Best of all, thyme simple syrup is a breeze to make. If you’ve been following me for a while you know how much I use them in cocktails. I love that I can make them a few days ahead of time and then just pop them out for cocktail parties- or for myself. No judgement here, right?!

Thyme Infused Aperol Spritz
Yields 1 cocktail
You’ll need:
- 3 ounces Prosecco
- 2 ounces Aperol
- Splash of sparkling water
- 1 tbsp thyme simple syrup
- Orange slices and thyme for garnish
For simple syrup recipe:
In a small saucepan boil equal parts sugar and water. For cocktails I tend to use a 1 cup to 1 cup ratio- it’s enough for several cocktails! Once boiling, reduce heat and add in 3-4 sprigs of thyme. There’s no magic number here! Want the thyme flavour to be more pronounced? Just add in more!
Let simmer for 20 minutes and then turn off heat and let cool. Discard sprigs and reserve liquid. Keep in refrigerator until ready to use.
In a wine glass with a large opening ( I like these ones here!!) add in a handful of ice cubes. Top with Prosecco and Aperol. Add in simple syrup and gently stir. Top with a splash of soda and garnish with orange slices and thyme sprigs.
Serve and enjoy!
